Gazpacho


4 medium tomatoes, chopped
1-2 cloves garlic, pressed
1 c. soft bread cubes
1/4 c. red wine vinegar
1 medium cucumber, chopped
1 green pepper, diced
1/4 c. olive oil
2 c. cold water
2 c. tomato juice
Salt and pepper to taste
Chopped green onions

Mix garlic, bread cubes, and vinegar, and work into paste.  Add 3 tomatoes and 1/2 the cucumber; mash as fine as possible.  Mix with the remaining tomato, cucumber, and green pepper; chill.

Before serving, stir in oil, water, and tomato juice.  Season to taste with salt and pepper; serve garnished with onions.
