Mom’s Potato Salad

Use 1/2 of the recipe for two servings.

8 medium potatoes, boiled and chopped
6 hard-boiled eggs, chopped
1 1/2 c. mayonnaise
1/2 c. sour cream (optional)
1/2 c. diced onions
1/2 c. diced celery
2 1/2 tbsp. prepared mustard
3 tbsp. vinegar
3 tbsp. sugar
3/4 tsp. salt
1/2 tsp. pepper
Paprika to taste

Mix mayonnaise, sour cream, onions, celery, mustard, vinegar, sugar, salt, and pepper.  Add eggs, then stir in potatoes.  Sprinkle with paprika; refrigerate.
