Apple Butter


3 lbs. cooking apples (Gala, Rome Beauty, etc.) cored, left unpeeled, and cut into eighths
3/4 c. firmly packed brown sugar
3/4 c. apple juice or water
3 tbsp. lemon juice
1 tbsp. ground cinnamon
1 tsp. allspice
1/2 tsp. ground nutmeg
1/4 tsp. ground ginger
1/4 c. ground cloves

Combine the apples, brown sugar, apple juice or water, and lemon juice in a slow cooker.  Cover and cook on low for 8 hours (or on high for 2 hours), until the apples are very soft.

Remove the lid, turn the heat to high, and stir in the spices.  Continue to cook uncovered for 2 more hours, stirring once about halfway through, until the mixture thickens.

Puree the apples in a blender until as smooth as possible.  If the consistency is still not thick enough, return to the slow cooker and cook on high for another hour or two.

After cooling at room temperature, store tightly covered in the refrigerator; it will keep for several weeks.
