No Pain Ordinaire

This is a good French bread straight from the machine – no need to shape and bake dough.  The first quantity listed makes a 1 lb. loaf; the quantity in parentheses makes a 1 1/2 lb. loaf.

1 1/2 tsp. yeast (2 tsp.)
2 c. bread flour (3 c.)
1 tbsp. sugar (1 1/2 tbsp.)
3/4 tsp. salt (1 tsp.)
1 tbsp. unsalted butter (1 1/2 tbsp.)
2/3 c. water (1 c. + 2 tbsp.)

Combine the ingredients in the bread pan, in the order listed.  Set on basic bread setting, medium or light crust.

For a softer crust, immediately rub the top and sides of the baked loaf lightly with butter, or place the warm loaf in a plastic bag to finish cooling.
