Baguettes


This recipe makes a small amount of dough. By dividing into two baguettes it made two teeny loaves; keeping it in one piece could work nicely.

¾ c. water
1 tsp. salt
2 c. bread flour
2 tsp. yeast

Place ingredients in bread machine pan in order listed; set to dough setting.

When dough is ready, remove from machine pan and punch down.  Roll out on a lightly floured surface into two baguettes. Place on a baking sheet, cut several diagonal slashes across the tops,  and cover with a cloth.  Put in a warm place to rise until doubled, about 45 minutes.

Make a wash of 1 egg white and 1 tbsp. water and brush on the top of the loaves; bake in a preheated 400º oven for about 25 minutes, or until golden brown.
