Sweet & Sour Cucumber


From Classic Chinese recipes

1 cucumber
1 tsp. salt
2 tsp. honey
2 tbsp. rice vinegar
3 tbsp. chopped fresh parsley
2 tsp. sesame oil
1/4 tsp. crushed red pepper flakes
strips of red and yellow pepper, to garnish

Peel thin strips off the cucumber; cut in quarters lengthwise and remove the seeds.  Cut into 1-inch long pieces and place into a colander.  Sprinkle with salt and set aside for 30 minutes to draw out excess water.  Wash the cucumber to remove salt, and pat dry with paper towels, and place in a bowl.

Combine the honey with vinegar and pour the mixture over the cucumber; mix well and marinate for 15 minutes.  Stir in the parsley and sesame oil, and sprinkle with crushed red peppers.  Garnish with thin strips of red and yellow pepper.
