21st Century Mac and Cheese


From the Spendid Table website, with a few modifications; the first time I made this I substituted peccarino cheese for the Gruyere and used smoky sharp cheddar:

½ lb. penne pasta, cooked and drained
1 large egg
1 c. milk
1 small clove garlic
¾ medium onion, coarsely chopped
1 generous cup shredded cheddar cheese
5 oz. cream cheese, crumbled
2/3 c. (about 3 oz.) shredded Gruyere cheese
Red pepper flakes
Freshly ground black pepper
¼ tsp. paprika

Preheat oven to 350°.  Butter a 2 quart casserole dish, and add the cooked pasta.

In a blender combine the egg, milk and garlic and process until smooth.  Add onion, cheeses, pepper flakes, black pepper, and paprika and blend about 10 seconds.  Pour over the pasta, and stir to blend.  Bake 20-25 minutes until thick and creamy.
