Ginger Ale


From “Cooking at Home with a Four-Star Chef” by Jean-Georges Vongerichten.  A refreshing drink with a bite.

1 pound fresh ginger, unpeeled and grated
2 stalks lemongrass, trimmed and minced
2 small fresh chiles, stems removed, or one dried red chili, whole
4 c. water
1 1/2 cups sugar
Soda water
Lemon or lime wedges for garnish (optional)

Combine the ginger, lemongrass, chilis, water, and sugar in a saucepan. Bring to a boil over high heat, then reduce to medium and simmer for 15 minutes. Cool, then strain and chill.

To serve, place 1/4 cup of the syrup in a glass full of ice. Fill with soda water, taste and add more syrup as needed. Garnish with lemon or lime wedges.
