Cole Slaw

The dressing in this recipe makes me actually like cole slaw.

1 egg
1 tbsp. white wine vinegar
2 tsp. capers, rinsed
1/3 c. olive oil

Process the egg, vinegar, and capers in a food processor until combined.  While still blending, gradually drizzle in the oil and mix until thoroughly blended.

½ green cabbage
4 scallions, chopped
¼ c. parsley
8 radishes, thinly sliced
Freshly cracked black pepper

Slice the cabbage into thin wedges and place on serving plates.  Spoon the dressing over the cabbage and top with radishes, onions, parsley, and pepper.
