Soupe Savoyarde

A very hearty, rich soup.

5 c. chicken stock
4 large potatoes, sliced
2 ½ c. milk
4 tbsp. butter
2/3 c. grated Gruyère cheese
Salt and pepper to tasts
4 slices bread, toasted

Heat chicken stock in a soup pot and bring to a boil.  Add potatoes and cook, covered, over low-medium heat for 30 minutes or until soft.  Blend the soup in a blender and return to the soup pot.  Add the milk, butter, cheese, salt and pepper.  Mix well and continue cooking until all the cheese is melted.

Place a slice of toast in the bottom of each soup plate.  Pour the hot soup over the toast and serve immediately.
