Italian Meatball Soup

Quick, easy, and yummy.  I used turkey meatballs with Italian seasoning.

14½ oz. can diced tomatoes, with onion and garlic
14 oz. beef broth
1½ c. water
½ tsp. Italian seasoning
8 oz. frozen cooked meatballs
½ c. small dried pasta (small shells, orzo, elbow macaroni, etc.)
1 c. frozen mixed vegetables
Parmesan cheese, shaved

In a large saucepan, stir together the tomatoes, broth, water, and Italian seasoning; bring to a boil.  Add the frozen meatballs, pasta, and frozen vegetables.  Return to boiling, then reduce heat; cover and simmer about 10 minutes, until pasta and vegetables are tender and meatballs are heated through.  Top with shaved Parmesan to serve.
