Fresh Lemonade Syrup


6/27/10 – the best homemade lemonade!  I made the syrup using a scant 2 cups (about 1 2/3) sugar and 1 tsp stevia, and it tasted great.

3 c. sugar (or equivalent amount of sugar and/or dietetic sweetener)
1 c. boiling water
3 c. lemon juice, from about 16 lemons
2 tbsp. grated lemon zest

In a 1½ quart heat-proof container, dissolve the sugar in boiling water; cool.  Add lemon juice and peel and mix well.  Cover and store in the refrigerator for up to one week.

To prepare lemonade:  For one serving, combine ¼  to 1/3 cup syrup and ¾ c. cold water in a glass; stir well.  For 8 servings, combine 2 2/3 c. syrup and 5 c. cold water in a 2 quart pitcher; stir well.
