Tomato Pie


Butter
9-inch frozen pie crust
Dijon mustard
½ lb. Swiss cheese, grated
3 large tomatoes, sliced ¼ inch thick
Freshly chopped basil leaves

Preheat oven to 350°.  Butter a 9-inch ceramic pie dish; place pie crust inside and spread crust with mustard.  Sprinkle evenly with cheese to cover the crust; cover with tomato slices in a tightly-packed single layer.

Bake until crust is brown, about 45 minutes.  Remove from oven and let set for 15 minutes.  Serve warm or at room temperature.
