Cola Syrup

I made this without the browning sauce; it looked like a pale orangeade in color, but the taste was great – fruity-spicy and refreshing.

1 quart water
1 lemon – zested and juiced, separately
1 lime – zested and juiced, separately
2 oranges – zested and juiced, separately
5 three-inch cinnamon sticks, broken into small pieces
2 tbsp. dried bitter orange peel
2 tsp. coriander seed
¼ tsp. finely grated nutmeg
1 tsp. gum arabic (optional)
2 lbs. sugar – or – 16 grams stevia
¼ c. browning sauce, such as Kitchen Bouquet
½ tsp. vanilla extract

Combine the water, lemon, lime, and orange zests, cinnamon, bitter orange peel, coriander, nutmeg, and gum arabic (if using) in a large saucepan.  Stir together until blended, or until the gum arabic dissolves.  Bring to a boil, stirring until the sugar dissolves; boil for one minute.

Remove from heat and stir in the lemon, lime, and orange juices, browning sauce, and vanilla.  Let cool, then strain.

To serve, mix ½ cup cola syrup with 1½ cups cold sparkling water.
