Flour: This mixture can be used to replace all-purpose flour in any recipe.  2 parts white rice flour, 2/3 part potato starch flour, and 1/3 part tapioca flour.  Combine all ingredients thoroughly with a whisk, and store in an air-tight container.

Butter: To reduce the butter in baked goods, substitute half the butter with mashed avocado; this is per a post in The Kitchn.  There may be a slightly greenish color, depending on the bakery goods; if they are darkened with brown sugar or cocoa, the color shouldn’t be too noticeable.
